my favorite muffins

healthy pumpkin banana muffins i. love. pumpkin. anything with pumpkin makes my mouth water. these muffins are full of flavor and are very healthy. for the bran i use Bob's Red Mill Wheat Bran available in the organic section (or sometimes the baking isle). if i'm short on applesauce i use apricot or mango preserves, and i don't have pumpkin pie spice so i substitute with ground cloves. i also use all whole wheat flour. i add in some wheat germ and flaxseed oil when i'm feeling REALLY healthy. i always take bananas when they're covered in brown spots, peel them, and keep them in a ziplock in the freezer. that way they're always on hand and they mash well when frozen.
