Cottage Cheese Pancakes

For 1 person:

  • 1 egg
  • 1 large tablespoon of cottage cheese
  • 1/8 tsp of baking powder
  • 1 large tablespoon of flour (I use brown rice flour)
  • Sprinkle flax meal…probably 1 -2 tsp.
  • Stir altogether and then add a little milk to thin the consistency Add blue berries and or blackberries
  • Pour into low heat pan and cover with lid…turn over when done on bottom side
  • Spread butter and Aquave nectar on top
  • Double for 2 people
