Cuba Libre's Mango Butter and Cuban Bread

Lee and I went with the Bunker's to Cuba Libre for his 30th birthday and when Mel mentioned how wonderful the mango butter was, the waiter offered to write down the recipe!

Lucky us, and lucky you- here is the recipe.


2 lbs. Softened Butter
6 oz. Mango Puree
1/3 C. Sugar
2 tsp. Ground Cinnamon
2 tsp. Black Pepper
(I would add a little salt to taste)

Serve with toasted cuban bread if available, or with a THINLY sliced baguette or a mild white bread, toasted. Serve the butter like a dip.

Bunkers..sigh. Im sure Mel loved this due to her OBSESSION with Mangos. I will definitely give it a try. Where do I find cuban bread??

no idea... just use a good, fresh white loaf sliced thinly and toast in oven.
